Today I’m sharing with you one of my favorite go-to, quick, frugal meals. I love Korean Ground Beef and Rice for two main reasons: 1) it’s super fast to make (20 minutes to the table) and 2) my kids always eat it. Plus, it’s economical to boot (easily less than $10 for 4 servings)! I add a side of steamed broccoli and an apple to round it out and health it up.
I like to cook once and eat twice, so I double almost every meal I make to use for leftover lunches or dinners later in the week. This is the perfect, simple recipe to double – the beef freezes and reheats well.
The recipe is adapted from this Korean Beef and Rice recipe at Taste of Home.
Korean Ground Beef and Rice
1 pound ground beef
1 small onion, chopped
4 cloves of garlic, minced
¼ cup brown sugar
¼ cup soy sauce
1 Tbsp sesame oil
Pepper to taste
Red pepper flakes to taste
2 1/2 cups cooked rice (white or brown)
Directions:
- Cook ground beef and onion until beef is cooked through and onions are translucent.
- Add minced garlic and cook another minute.
- Combine brown sugar, soy sauce, sesame oil, pepper and red pepper flakes.
- Pour sauce over ground beef mixture and cook 1 minute.
- Serve over cooked rice.
Makes 4 servings

After living in Seoul for a few years, I’m convinced that Korean food is the best cuisine in the world. SO good! This would be good with a side of kimchi ;).
That must have been amazing having Korean food all the time. I love it too. This recipe is far from authentic, but it’s quick, easy and it’s tasty. You’re right a side of kimchi would be perfect!
Looks delicious! I do a very similar thing with chicken. All of those “stir fry” sauces are pretty much just soy sauce and sugar anyway. We have a rice cooker, and usually have some rice ready to go 🙂
You should share your chicken recipe! I still haven’t bought a rice cooker. I am hesitant to add any appliances, but I think it would save me a ton of time…especially on clean up.
Looks great! We have some food allergies in the house, so can’t use soy. I make a similar rice bowl with different seasonings.
Bummer on the allergies, Brian! But any rice bowl works for my family. It’s always guaranteed to be a dinner everyone will eat and like.
Have you ever used coconut aminos as a substitute to soy sauce? It contains less sodium, has a little sweetness to it, and it tastes almost like soy sauce. And, there is no soy in it.

Yum! Looks de-lish, simple, and cheap. All the things I’m looking for @ dinner time. We do something similar with a chorizo recipe. Cheap dinner ideas have made a huge difference in our grocery budget which has helped a ton with us paying off $600k in student loan debt
Thanks, Amber! I love chorizo, but my daughter is anti-spicy food. Whenever I have a recipe that calls for red pepper flakes, I separate her portion out and add them in for the rest of us! And I’m with you – I love cheap, fast and at least relatively healthy recipes.
